One of the most delicious signs of summer can be found in the produce section of the market in the form of berries and watermelon. And every year, as soon as I see them in all of their fruity vibrance, I have to have them and incorporate them into every meal.
Last week, I whipped up this icy, sweet drink that is as nutritious as it is tasty. Watermelon is packed with nutrients, great for digestion and blood pressure, and along with the coconut water will keep you hydrated in the warm months. Strawberries, of course, are full of antioxidants and vitamin C. Together, they’re a delicious blend of summer fruits that does your body good. What’s better?
Of course, it’s also the perfect base for other kinds of mixed beverages.. perfect for Cinco de Mayo, tomorrow! ;)
*Tip: Freezing the watermelon and strawberries for at least two hours prior to blending eliminates the need for ice. This means maximum deliciousness not watered down.
2 cups fresh watermelon, chopped
2 cups fresh strawberries
1/8 cup coconut water
Directions: Add watermelon, strawberries and coconut water to your blender. Squeeze in the juice of one lime. Blend until smooth. Enjoy!
*Less healthy variations: add gin or tequila for the ultimate summer indulgence.
